I am not from Atlanta, so I don’t know of the specific programs there. However, I’m sure you could pursue a degree in any major language. Many universities and colleges do offer degree studies in languages.
You could also look into cultural geography. Since you know many languages already, you probably have some good knowledge of various cultures. You could put the two together, if that interests you.
Another option would be to study linguistics. Basically, you would be learning to write the way words sound and could compare several languages as well.
If you’re looking for specific preparation, you could consider ‘continuing education courses’. I don’t know if you have anything like these courses near your area. Essentially, these are courses offered at universities and colleges that can prepare you for a degree but are usually not worth credit. For instance, you could take a mathematics course that prepares you for university or college.
I hope that helps!
